i noticed several alchemy-made items do not equal the items that are found in-game
for example:
the full helmet of might as found has the following stats:
That is full helmets of Might +2 (Str+1)(Dex+1)(Con+1)(ac+1)(item_power +3)(armour +10)
the alchemy made full helmets of might:
That is full helmets of Might +2 (Str+1)(Con+1)(ac+1)(item_power +3)(armour +10)
difference: alchemy made full helmets of Might lack one Dex stat.
other example: when Vulcan was testing the recipe for levitation boots of mobility (it was broken due to a dread/Dread eyes issue) he failed and created random tainted items. One of these items was levitation boots of mobility.
After patching some dread eyes to Dread eyes, i had 100% success creating these things and to my surprise the alchemy made boots had half the resistances the 'failed' boots had!

resist fear +50, resist slow +20, resist paralyse +20
the tainted levitation boots of mobility had (not complete)
resist fear +100, resist slow +40, resist paralyse +40

If i had the time, the skill, the recipes, the ingredients and the items, i could test all recipes and see if something strange happens with other recipes too.
My question (for now) is: how does this occur, and is it intented?

By resistances and helf of them, what do you mean?
This sounds like a very interesting bug, but you fail to convey portions of the message. can you restate a little clearer?
