I've seen Akira and spirited away, if those count. I thought Akira interesting in places but to convinced that it is cool, to the extent that it has shots that get in the way of the plot (eg the bike racing), this is the same problem that Tron faced IMHO. Spirited away I liked a lot, a very nice Alice in Wonderland-esque story, though the fact that I can describe it as such probably places its influences as predomiently European, chinese-style dragons notwithstanding.
Personally I have found it very hard to watch/read anime/manga, I never know where to start.
I tried reading Ghost in the Shell, I thought it rather dul tbh, maybe I started reading at the wrong point? Having said that I have never been a big comic book fan anyway.
I tried watching Dragonball Z and just couldn't stand it, far too contrived for my taste, give me tintin any day.
If you extend your question to cartoons in general however (waits for the groan from those who resent the idea of anime being described as a cartoon), then I would have to list

Thundercats
Teenage Mutant Hero Turtles (the first few series, before it became crap)
In that order, with an honourable mention to Captain Scarlet (which is marrionettes not a cartoon, so doesn't strictly qualify)
Ghost in the shell i like the most.
then, may be Inuyasha.
I prefer the Operas, like Der Ring des Nibelungen (the BEST ), Electra, Boris Gudonov etc...
